Banana cake recipe

Banana cakes recipe and preparation instructions.

 

Ingredients for this banana cake recipe (approx 10 slices). 

100 grams of butter that has been melted

1/2 of a cup of low fat milk

One teaspoon of baking soda

Two cups of flour

Three whole eggs

One cup of white sugar

 

Three peeled bananas. Mash the bananas with a fork

150 mls of plain yoghurt or fruit yoghurt ( use personal preferences, but not too strong a flavour)

Three teaspoons of baking powder

 

Lemon Icing for Banana Cake Ingredients

25 grams of butter, margarine or olive spread
Grated lemon rind and the squeezed juice of 1 lemon strained to remove the pips.
Two cups of icing sugar

 

Cooking or Preparation Instructions for Banana Cake

Warm your oven to 160 degrees celsius. Spray a 20 cm round baking tin with non stick baking spray. Line the base of the baking tin with baking paper.

Beat the sugar and the melted butter and eggs together until the sugar and melted butter are thick and creamy. Add the mashed bananas and beat well.

Heat the milk in a small microwave proof bowl or perhaps a glass jug in the microwave until nearly boiling (approximately 1 minute). Do not boil the milk, or it will curdle.

Stir the baking soda into the milk and then stir this into the banana cake mixture. Add the yoghurt, flour and baking powder to your fresh banana cake recipe mix.

Mix well and pour the banana cake mixture into your cake tin and bake for 45 to 50 minutes until the banana cake is cooked in the middle and just pulls away from the edges of the tin.

Cool the banana cake in the tin for then release the spring sides and cool completely on a cake rack. When the fresh banana cake is completely cold, ice the banana cake with either lemon icing or cream cheese frosting. See below for fresh lemon icing recipe for banana cake.

 

NOW TO MAKE THE ICING FOR YOUR BANANA CAKE

Put the butter, lemon juice and the lemon rind in a small microwave proof jug or bowl. Microwave these icing ingredients on high for 30 to 40 seconds or until the butter has melted. Now beat in the icing sugar to make a fluffy icing. Spread the fresh lemon banana cake icing over the cool banana cake.
