Pikelets recipe

Ingredients for this fresh pikelets recipe (makes about 15)

One teaspoon of baking powder

310 mls (or 1 1/4 cups) of milk

Olive oil spray to grease your baking tray with. Some prefer to use butter or margarine for this.

200 grams (or 1 and one third cups) of self-raising flour

One tablespoon of caster sugar

One egg, lightly whisked

Strawberry jam and/or whipped cream, to serve
 

Cooking or Preparation Instructions for fresh pikelets

Sift the flour, the baking powder and the sugar into a large bowl then make a well in the centre.


Whisk together the milk and egg in a jug. Pour this egg and milk mix into the flour mixture and then whisk until a smooth batter has formed. Cover your pikelet recipe mixture with plastic wrap and set aside for 30 minutes to settle.


Now heat a large, non-stick frying pan over low heat. Lightly spray your frying pan with the olive oil spray to grease. Spoon half of the fresh pikelet batter into the frying pan until you get the right size pikelet – smaller pikelets for little children, bigger pikelets for bigger kids. You can also use a jug for making pikelets.


Cook for 1 to 2 minutes or until bubbles appear on the surface. This time will lessen as your pan heats up. Turn and cook the pikelets for a further 1 minute or until your fresh pikelets are golden brown.


Transfer the pikelets to a wire rack. Repeat with remaining pikelet batter, reheating You may also wish to clean the pan down with a paper towel after every other pikelet has been cooked, to remove any old oil, then spray your frying pan with fresh oil for a new batch of pikelets.
