Banana bread recipe

Ingredients for this banana bread recipe

  • 125 mls - half a cup of - milk low fat or skim milk if you like.
  •  
  • Some low-fat dairy spread -used for greasing the pan once melted.
  •  
  • 140 grams or two-thirds of a cup firmly packed- brown sugar
  •  
  • Two very ripe medium bananas that have been mashed.
  •  
  • 40 grams -one quarter of a cup of plain flour.
  •  
  • 1 teaspoon of ground cinnamon.
  •  
  • Two eggs that have been lightly whisked.
  •  
  • 50 grams of butter that has been melted.
  •  
  • 265 grams - or one and three quarter cups - of self-raising flour. 
     

 

Preparation and cooking instructions for fresh banana bread. (Makes 1 loaf and takes about 1 hour including cooking time)

First, heat your oven to 180 degrees centigrade. Then, lightly brush an 11 x 21cm bread or loaf pan with the dairy spread to lightly grease your loaf pan. Line the base of your pan and sides with non-stick baking paper. Allow the paper to hang over the edges slightly.

 

Sift all flour and cinnamon into a large bowl, combining them. Ten, into this mix, add in the sugar, stir in and mix evenly, then make a well in the centre.
Put the milk, the eggs, the butter and banana in another bowl large or medium, and stir until this is well mixed. 
Add both of these mixtures together and stir them until adequately mixed - don't over stir.
 Either pour slowly or ladle the mixed ingredients into the pan or baking tray made ready earlier and smooth the surface gently.

 

Bake the mixed banana bread ingredients for 45 to 50 minutes or until a fork inserted into the centre pulls out clean. Remove the fresh banan bread  and allow it to settle in the pan for 5 minutes.
 
Turn out of the pan and place onto a rack to cool down adequately. Cut your fresh banana bread into slices and its time to eat!!
